Chef German Mosquera made his way to Houston to help open Ruggles Green/Grill concepts. Helping to develop menus, recipes and green restaurant certifications rekindled his inspiration for seasonal/local produce. Several years later an opportunity came to be part owner/chef of Roots Bistro/Juice. He then moved on to be the executive chef at La Colombe D’or. Most recently, he has developed a series of pop-up dinners under the name "Dig and Serve." Along with Chef Brandon Gregoire, they have been growing their own veggies and are able to harvest enough to do small dinners with the freshest ingredients.
